Blog Candy X3!

This Friday, at midnight, H&M Stamps opens its doors for business. It's so exciting to see Heather (owner and illustrator) turning her dream into a reality. Way to go, Heather! The design team has been posting projects with the three April sets, and the response has been huge! You can see all of the projects HERE. To celebrate the upcoming launch, each of the design team members will be giving away one of next month's stamp releases. Won't that be fun?!

But that's not all I'm giving away. Last week, the FedEx truck pulled up and dropped off a very welcome package from Northridge Media, the company that publishes CARDS and Paper Trends magazines. I have a project in the April 2008 CARDS (my very first-ever published work - very exciting!), and another in the April/May issue of Paper Trends. The "compensation" is a couple of copies of the publication and an assortment of papercrafting goodies. What I loved most about the arrival of this package was the timing. I just passed 75,000 hits over the weekend, so what a great opportunity to share the loot!

Here's how this will work: On Friday morning, 9 am, I'll draw THREE winners: the first will get to choose which May H&M Stamps set she/he wants (I'll have peeks for you), and once it's available, Heather will ship it directly to you (2-3 weeks from now); the second will get the April CARDS issue; and the third will get the April/May Paper Trends. To enter, leave a comment with your favorite super fast recipe (yes, I'm copying Cambria here, but what a great idea - I'm all about speed in the kitchen these days ... more time to stamp!). And if that's too hard, how 'bout your favorite casual restaurant?

My favorite recipe:

Place a beef roast in the crockpot, dump 1 tall jar of whole peperoncini peppers with juice over the top. Cook on low all day.

Extract peppers, shred beef, serve on hoagies with a slice of provolone cheese and sliced peperoncini rings.

Smothered Pork Chops
Put pork chops in greased pan, season with season salt and pepper, pour 2 cans of cream of mushroom soup over the top, add one can of water and bake on 325 for a couple hours.

Lay pork chops out in a baking pan. Pour tomato sauce over each chop (a small can of tomato sauce will do). Place dollops of sauerkraut between the pork chops. Bake @ 350 for 30 minutes.

Quick and easy, huh? I like to heat up crispy chicken strips in the oven and put them on tortillas with ranch dressing and lettuce. I've got lots of others, but that one is a fun family dinner everyone loves!
Congrats on your published projects. You do awesome work, so it was inevitable!!!

Tilapia Tacos. Light and tasty. Yummy for this Mummy! You cook the tilapia, and then shred it. Add all the fix ons like cheese, onions and garlic, I add peas(pregnancy thing)lettuce, and jalapeno ranch for me! And as my one year old says..."It's just like that!"

Orange Chicken - so yummy and fast! You take two or three thawed boneless, skinless chicken breasts and pour French Dressing over the top of them. In a bowl or measuring cup, heat some orange or apricot jelly (approx. 30 sec.) until a little runny. Pour that over the chicken as well. Then take French Onion Soup Mix and sprinkle on top. Bake for about 45 minutes at 425. Serve with rice or potatoes - it's so good!

Here's a quick and easy dip.

In bowl combine 1 can black beans, drained and rinsed, 1 small onion finally chopped, chopped fresh cilantro to taste, and a 16 oz. jar of salsa. Serve with tortilla chips. Highly yummy!!!

SW Baked Beans:

1 can black beans
1 can corn (drained)
1 onion
1 cup salsa
1 cup sour cream
1 cup cheddar cheese
1 cup (uncooked) rice, cooked

Stir it all together, add any desired spices, put it in a cassarole dish and bake at 350 for about 45 minutes. It's delicious and awesomely simple/quick. Eat as a main, side or wrapped in tortillas.

Wow! What an exciting week! I just love your stuff!
My favorite quick food fix is an appetizer:

Spinach Artichoke Dip
1 pkg cream cheese
1 c mayo or miracle whip
1 c chopped spinach
1 can artichoke hearts chopped
1 c grated parmesan cheese

Mix all ingredients together and microwave for 5 min. stirring half-way through. If desired put in oven safe dish and put under broiler for 2 min. Serve with bread cubes or tortilla chips! YUM!!!

Hi!
Mix 1/2 cup water with 1 package dry Good Season's Italian dressing and pour over 4 boneless chicken breast in the crock pot. Cook 5 hours on low. The last hour add 1 cut up block of softened cream cheese (stir in so it can melt). Serve over egg noodles. My kids and hubby really like it!

Oh, Oh! I want to play! I don't really cook much these days it seems so I'm going to tell you my new favorite casual restaurant. I mentioned I went there on Friday night but Lowry's was fantastic in Hamilton, Virginia.

I haven't tried it yet but I'm reading a book that suggests the following recipe for summertime. I think it will be a hit at my house.

Frosted Fruit Cocktail
3 medium bananas, mashed
1/2 cup sugar (can be omitted)
1 can (1 cup) crushed pineapple in heavy syrup (use fruit and juice)
2 lemons, juiced and strained (or use 1/3 cup lemon juice)
2 cups orange juice
2 cups ginger ale or Sprite

Mix in order given. Freeze. Take out of freezer about 30 minutes before serving. Serve in bowls when slushy. Return unused portion to freezer.

Doesn't that sound like a fun summer treat?!

My favorite fast recipe is Peanut butter cookies-
1 cup peanut butter, 1 cup sugar, and 1 egg. Mix together, drop by the tablespoons onto a cookie sheet, use a fork to flatten slightly, bake at 350 for 12 minutes or so.
SOO good.

Congratulations on the hits, the publications and to H&M Stamps. What a great way to start off a week.

My favorite recipe I found is in the Kraft magazine. I love that magazine, it is free and all you have to do is sign up.

Anyway, it is Bruschetta chicken bake. Cut about 2-3 chicken breasts in cubes, put them in a greased 9X13 or casserole pan. I put some italian seasoning on top, with some mozzarella cheese. After than you mix a bag of chicken stuffing, a can of stewed or diced tomatoes, and a 1/2 cup water. mix all that together and then pour that on top of the chicken. Cook it in a 350 degree oven for about 30 minutes or chicken is cooked through. So tasty and easy shmeezy.

I am the type that has to read a recipe as I am cooking and follow it to a "T", but I actually do remember a simple yet yummy way to prepare asparagus:

Drizzle olive oil over asparagus (cleaned and snipped of course)on a baking sheet. Sprinkle with salt and paper. Bake at 425 deg for 10 - 15 minutes.

I think this is the only way my husband and I will eat asparagus now!

ooh I love these books. Thanks for the opportunity to win. Yesterday I made a pie that was super easy... it was a strawberry jello pie.

Make the jello as the package states and add 1 cup of cool whip (slightly thawed). Then once all mixed leave in fridge for 1/2 hour. It will harden a bit. Then place this mixture in a store bought graham pie crust. Add strawberries on top and refrigerate for 6 hours or overnight.

It is super yummy.

Congrats!!! My favorite receipe is humus.

One can of chick peas rinsed and drained
One clove of garlic
One tablespoon of olive oil
1/2 small jar of roasted red pepper (packed in oil)

Put in food processor and let it rip.

It's a good life!

Best chip dip ever ~~ mix cream cheese, grated or finely chopped onion & a little bit of milk with beaters. Of course, the more milk you add the creamier & softer it will be ~~ so yummy!!

i keep ground beef seasoned with onions and garlic in the fridge or freezer and use it to make "patty melts" in a sandwich grill--a couple spoonfuls of the burger mix, a slice of cheese and 8 minutes later you have a yummy burger, my kids love them and my husband does too

Yours is part of my top five blogs - and I check everyday for inspiration and enjoyment! Thank you! Since my husband does most of the cooking - am I ever spoiled!- my favorite is to keep hamburger already browned in the freezer. That way I can toss some spices on it and add to a salad, use it with tomato sauce and spices for spaghetti, or???? The ideas can be endless and of course it is simple!

I don't know how casual of a restaurant this is, but my favorite super fast meal is to order Olive Garden to go. If you get the lunch portions, they are way cheaper and you get a huge salad (with their amazing salad dressing), 2 breadsticks, and I always get pasta for like $6! It ends up being two meals for me.

I had some yummy mini pizza's last night, they were simple to make. Just cut hoagie rolls in half (these were cheese flavored, yum) spread with Ragu pizza sauce, add some cheese, then your choice of toppings (we had canadian bacon, pepperoni, olives and mushrooms) add some more cheese (shredded of course) and bake at about 350 for about 7 to 10 minutes, just until the cheese is melted. They were so good!

Here is a fun resipe that my hubby adore:
Brown a pound of ground beef. Drain. Add a pack of Taco seasoning, 1 cup of water, 3/4 cup of milk, a cun of Cream of Mushroom soup, and (if desired) a small can of chopped green chilis. Put the beef mixture in a casorole dish. Cover with Doritos chips. Then sprikle plenty of shredded cheese. Stick it in the oven for about 5-7 min (untill cheese melts). Serve with Sour cream.

I like this meal because it is super quick and has an awesome flavor.

If you like fish, this is a great super-fast salmon recipe that I got from a friend.

You need: A salmon filet of your desired size. 3 oranges. Some dried thyme and rosemary. A couple tablespoons of honey. A little olive oil. Salt & pepper.

Rice and stamed veg is a great side to this. If that's what you want, put it on, then start working on the fish.

First, zest one of the oranges, and juice all three. Set the zest aside. Put the salmon in a bowl or on a plate and cover with orange juice. Let sit no more than 10 minutes.

Heat a little oil in a pan over medium-high heat. Add fish, skin side down. Let cook for 5 minutes. Pour in orange juice, sprinkle with some rosemary and thyme (1/2-1 tsp of each). Let simmer until fish is done the way you like it (another 10 minutes or so should do it!).

Remove fish from the pan and plate. Bring sauce to a good simmer (if it's not already) and add a couple tablespoons of honey to thicken. Stir, and spoon sauce over fish.

By now, your rice and vegetables should be done. Voila, dinner in less than 30 minutes!

Thanks so much for the opportunity to win the great blog candy! My husband would testify that cooking is not a talent of mine, but there are a few "fool-proof" recipes that we enjoy over and over that are simple to make and delicious. My favorite is:
Crescent Chicken Bake
Ingredients:
-1 cans (10 oz.) chicken, drained
-1 cup shredded cheddar cheese (I usually use a bit more)
-1 can (8 oz.) crescent rolls
-1 can (10.75 oz.) condensed cream of chicken soup
-1 cup milk

Heat oven to 375 degrees
Mix chicken and half of cheese in bowl
Unroll crescent dough, spoon chicken mixture onto rolls, dividing equally
Roll up into crescents, place on ungreased baking sheet
Bake in 375 degree oven until golden brown, 8-10 minutes
Heat soup, remaining cheese, and milk in a saucepan until cheese is melted (use as a gravy)
Serve with filled crescents

Congrats on your publications Amy! Ive been drooling over the H & M stamps! My fave super fast recipe is Pizza Soup.

1 can pizza sauce or tomato soup
2 cups water
1/2 lb cooked ground beef
8 oz pepperoni

You can add any additional ingredients like mushrooms, etc you would eat on pizza but my kids like it w/just the beef and pepperoni. I top it off w/gold fish crackers and they love it!

One of my favourite recipes is for Chicken Quasadillas. You grill or fry up some chicken in your favourite spices (I like Garlic Plus) and cut the chicken into 1 inch squares. Lay out your whole wheat tortillas onto a cookie sheet and spread salsa all over the inside. Sprinkle with shredded cheese and your chicken chunks and fold over. Bake in the oven until crisp. Use sour cream to dip them in and viola! Yummy!

I might have new recipes for the whole next month. I love to cook - but it's not my favorite thing to do - I'd rather spend that time stamping or playing with my son.
Here's one I made yesterday - DUMP CAKE!
Dump 2 cans cherry pie filling into a 13x9 baking dish. Dump one yellow cake mix over this and spread out evenly. Cut up 1 and a half stick of butter and spread out over the top of the dry cake mix. Bake in a 350 oven until bubbly and golden. Yummy. You can substitute other fruits but I always use cherry.

For quick, extra tasty rolls, try this:
Tonya’s Herbed Rolls

While frozen, coat Rhode’s roll dough in melted butter and garlic, then roll in mixture of 1 cup Parmesan/Romano cheese & 1 T. parsley. Bake at 350° for 10 minutes.

Congrats on 75,000! I don't really cook, but when I do, it's something like this: Cool Whip salad (there is no lettuce involved!). One tub Cool Whip, one can chopped pineapple (drain the juice), one package of Butterscotch Instant PUdding & Pie Filling. Mix all together & chill! Easy and delicious! Go crazy and double it with a large tub of Cool Whip!

This recipe is a go-to!

Crockpot
4 frozen chicken breasts
1 package Lipton seasoning
1 container light or ff sour cream
fresh mushrooms

mix the container of sour cream and lipton seasoning and pour it over the chicken breasts. Poor mushrooms over that.

Cook on low for 6 hours.

Serve over rice.

So good!!!

crock pot mac n cheese

one bag of mild cheddar cheese
one bag of sharp cheddar cheese
one box of elbow noodles, cooked and drained
one cup of milk
one can of evaporated milk
one stick of butter
salt and pepper to taste

combine all ingredients in crock pot and cook on low for about three hours until bubbly! Delicious!

I'm gonna have to visit later to collect all the recipes but here's a quick one the kids especially like!
ZIPLOC Omelet

This works great! Good for when all your family is together. The best part is that no one has to wait for their special omelet!

Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.

Crack 2 eggs (large or extra-large) into the bag (not more than 2) and shake to combine them.

Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.

Each guest adds prepared ingredients of choice to their bag and shake. Make sure to get the air out of the bag and zip it up.

Place the bags into rolling, boiling water for exactly 13 minutes.

You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.

Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.

Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.

A weekday staple in our house is Ground Beef Stroganoff.
Just cook the ground beef with a clove of garlic and add a can of cream of mushroom soup. You can also add sauteed mushrooms, canned mushrooms, onions, a dollop of sour cream and a dash of Worcester sauce if you want. Serve over cooked egg noodles or pasta of your choice. My kids LOVE it. We serve it with parmesan and crusty bread.

How about some great homemade salsa? Dump all of these things in your blender - one can (14-16 oz.) stewed tomatoes, one small can (4 oz.) green chilis, hunk of onion (about golf-ball size or a bit bigger), cilantro to taste (we like a lot, like at least half of the bunch), garlic (we use chopped garlic from a jar), and one or more jalapeno peppers if desired (chop off the stem first). Turn the blender on. That's it!

Gosh, a quick recipe...how about put some chicken breasts in the crock pot, pour some BBQ sauce over top, maybe add some onions so the sauce doesn't burn. Then when it's cooked, shred the chicken then place it back in the warm crock pot just to heat through. Finally serve overtop some nice buns!

Here is a recipe which I picked up on a recent tv show - how quick and easy. Saturday lunch is time you don't want to waste in the kitchen.

Fast Steak (Saturday lunch)

• 1 tbsp mixed peppercorns,cracked
• 4 x 100g rump steaks, cut as thinly as possible
• 1 carrot
• 1 celery stick
• 1 lebanese cucumber
• 1 punnet enoki (or other) mushrooms
• 4 rice-paper sheets
• 1/4 cup mixed vegetable juice
• 1 tsp Tabasco
• juice of 1 lemon
• 2 tbsp olive oil
• salt and pepper, to taste

1. Put cracked peppercorns on a sheet of baking paper. Coat both sides of the steaks with cracked pepper. Heat a large, heavy-based pan until hot, then add the steaks and sear on each side.
2. Slice the carrot, celery and cucumber on a mandolin (or grater), using the julienne blade, then put the vegetables in a bowl. Add mushrooms and toss to combine. Put each rice-paper sheet in a bowl of warm water for 30 seconds, or until soft. Remove, then transfer to a clean tea towel. Arrange vegetables along the centre of each soft sheet, fold in the sides and wrap up.
3. Mix the V8 juice, Tabasco, lemon juice and oil and season lightly with salt and pepper. Spoon the V8 mixture over the steak and wraps to serve.

Prep time: 5 mins
Cook time: 1 minute
Serves: 4

Congrats on your hits and publications!! My favorite fast recipe is to roast veggies. I use onions, mushrooms, zucchini, cauliflower or whatever veggies you have and like (brussel sprouts, carrots, etc). Just place all cut veggies on baking sheet and use some olive oil and salt and pepper. Bake at 350 for about 30 minutes. It's fast and yummy and healthy!

Super fast recipe

Can of beef stew in bottom of casserole dish, maybe two cans or one of those really big cans. A can of veggies on top, whatever kind you like. Then mashed potatos. Now I make those from real potatos, I think it makes everyone not notice the canned stew, but you could do froma mix if you were so inclined.


Fancier, but almost as fast:
slice chicken breasts open but still attached on one side, I think it's called, "butterflied" then put inside some mustard and a some ham. Close them back up and put them in your casserole dish. Cover with crushed pretzels. Bake at 350 until the chicken is done. The ham/mustard/chicken/pretzel combo is delish. Oh I use honey mustard mostly.

Easy fish marinade, best on salmon but any fish would work

1TBSP seasame oil
3TBSP liquid honey
1TBSP soya sauce

Mix and pour over fish. Cook at 400 F for about 10 - 15 mins, depending on the amount and thickness of fish. YUM!!

My families favorite recipe is barbecue chicken pizza.

Boil chicken and shred. Add barbecue sauce to chicken. Take pizza crust, spread more barbecue sauce on crust. Place chicken on crust, and cover with Mozzarella cheese...cook at 350 until cheese is melted and enjoy. Thanks so much for the chance to win.

Here is a quick and easy recipe -

Hobo Dinners -
make hamburger patties, peel and cut potato's and carrots and place around the hamburger patty on a piece of foil. Add a tablespoon of butter with a little salt and pepper, seal it up and cook in an oven on 350 for 1 hour. YUM MY...

Brown 1 lb. ground beef (drain fat)
Add 1 can Rotel tomatoes
1 can Pinto Beans
1 can Minestrone Soup
If you need extra liquid just rinse out one of the cans w/water. Heat & eat. YUMMY

Let's see, my favorite easy dinner is southwest chicken - you just put boneless chicken breasts in the crockpot, cover them with salsa and cook them on low all day and then shred the chicken and make burritos with all the fixins. Sooo easy.

Here is a real one from my favorite recipe website: www.allrecipes.com

Aunt Fannie's Dinner:
1/2 cup uncooked elbow macaroni
1.5 lbs ground beef
1/2 onion, chopped
1 t garlic powder
salt & pepper to taste
1 (8 oz.) can tomato sauce
1 cup stewed or diced tomatoes
1 (15 oz) can whole kernel corn, drained (NOTE: I chanced this to kidney beans.)

1. Cook macaroni until al dente; drain.

2. Saute ground beef 5 minutes. Add onion & saute 5-10 minutes. Season w/ garlic powder, salt & pepper. Add tomato sauce, tomatoes, corn & cooked macaroni. Stir well and heat through, about 5-7 minutes.

My fastest meal is to put eggrolls on the microwave for some minutes before I put them in the oven that I preheat and then make some rice. In like 10 minutes I can have a supper... I only have to add some vegetable like a salada.

Hello! I want to let you know your work is to swoon over!! It is yummy stuff! Thanks for the chance at blog candy! My quick recipe is one for a "what are we gonna do for supper" kinda night. Take any kind of leftovers, even ham lunchmeat and cheese! Flatten out some Grands bisquits and put a tbsp. of "leftovers" inside. Bake normal bisquit time and wala! Thanks for sharing!!

Amy, Congratulations! I love your blog. My family's favorite is an appetizer...Bacon Wrapped Dates.
1 Pkg Dole Pitted Dates
1 lb Maple Bacon
I cut the bacon in half and wrap each half around the dates. You can secure with toothpicks or place seam side down on a jelly rool pan (there will be grease).
Bake at 350 degrees until bacon is crisp (about 25 minutes). Drain on paper towel. They can be served immediately - but be careful...hot! Or you can let them cool. Don't tell the kids there are dates involved, most people claim they don't like them...but this is a great treat!

Congrats on your publication! As for fast and easy recipe I like to make the shredded beef on a bun by throwing a beef roast in the crockpot with a package of dry italian dressing and cooking overnight or all day. No need to add liquid or anything. Just cook it until it falls apart. Shred it and serve with buns. It's a real crowd pleaser and couldn't be easier.

Quick recipes: My DH BBQs asparagus and it is amazing! Coat with some olive oil, salt, and pepper. BBQ for a few minutes (cooks very quickly) and then sprinkle some lemon juice and parmasean chees over top. It is to die for -- I wasn't an asparagus lover until he made it this way and now we fight for the leftovers!

Tex Mex Pie is my favorite quickie:
just FOUR ingredients and bingo!
1 pkg. ready-made pie crust
1 pound ground beef
1 jar salsa
1/2 to 1 pound shredded cheese

Line pie plate with a pie crust. In frying pan, brown ground beef and add the salsa. Turn into pie plate. Top with shredded cheese.
Bake at 350 for 1/2 hour and it's done and delicious!

Thanks for the chance to win! My fave is stroganoff meatballs. 1/2 onion sauteed in 1/4 cup butter. Add 1/2 cup flour, 2 cans consomme, and 1/4 cup ketchup. Add meatballs (I buy them frozen) and serve over egg noodles! YUMMY!

My favorite fast recipe:
DUMP CAKE

lg. can of crushed pineapple
lg. can of cherry pie filling
box of yellow cake mix
stick of butter - frozen
chopped walnuts (optional)

Preheat oven to 350. In a 9x13 pan, dump one large can of crushed pineapple, including juice. Spread. Dump in the cherry pie filling and spread over the pineapple. Dump in the dry yellow cake mix and spread over the cherries, breaking up big lumps of cake mix. Thinly slice the stick of butter and place butter pats over the cake mix (use the whole stick). Top with walnuts. Bake at 350 for one hour. Serve warm with ice cream or cold with Cool Whip!

crockpot chicken stroganoff
4 boneless skinless chicken breasts
16 oz sour cream
1 can cream of mushroom soup
1 envelope onion soup mix

combine all but chicken. put chicken in crockpot. dump others over top. cook on low all day. serve over cooked egg noodles.

WOW fun blog candy. I love your art work. anywho. quick and easy for me is
one package of frozen of any brand O'brien potatoes (the kind what is cubed with green peppers and onion in it)
1 large can of chicken broth
and one envelope of dry country gravy mix (like Pioneer brand)

heat chicken broth and gravy mix in large sauce pan once it starts to boil pour in entire bag of potatoes simmer for 20-30 mins. thats it easy peasy, lowfat, super quick and yummy potato soup!!!

Yogurt to fill a bowl
chopped garlic to taste--I use 3-4 cloves
pinch of salt
2 TBSP or so of tahini

Let it sit in fridge overnight.

Mint Cookies
These taste just like the Girl Scout Thin Mints! Melt Chocolate Mint wafers (Wilton or another brand). Dip Ritz crackers in the chocolate, then place them on waxed paper to dry. That's it! Sooo simple but so good!

SKILLET LASAGNA
Cook 1 pound lean ground beef, 1/4 cup chopped onion and 1/2 cup chopped carrots in a Dutch oven on medium-high about 6 minutes or until beef is no longer pink. Drain. Stir in 1 1/2 cups mafalda (mini-lasagna noodles or other pasta), 1 1/2 cups water, 1/2 teaspoon Italian seasoning, 2 cups red pasta sauce and 8 ounces sliced fresh mushrooms. Heat to boiling, stirring occasionally. Reduce heat to low; simmer, uncovered, 10 minutes or until pasta is tender. Sprinkle with 1/3 cup shredded part-skim mozzarella.

I just tried this recipe and thought it was good:
Crockpot Macaroni and Cheese
8 oz macaroni, cooked
1 stick butter
3 eggs beaten
12 oz can evaporated milk
3 cups shredded cheddar cheese
Mix all together except for 1 cup of the cheese. Pour into a sprayed crockpot and top with the 1 cup of cheese. Cook for 3 hours on low without opening lid.

DD (age 9) and I came up with this (I don't use recipes normally).

Preheat oven to 425.
Place frozen chicken tenders (just frozen uncooked chicken--not the ones that have been coated and fried) in the bottom of a 9 x 13 pan. Pop in oven while you do the next step.

Compine a cream of something soup (your choice) and frozen veggies (your choice--mixed works well--about half a pkg) together. Pull chicken out of the oven and pour over the chicken. Return to oven for the next step.

Prepare cornbread mix according to the directions on pkg (we use Jiffy) and add a cup of shredded cheese (we use cojack usually).

Pull out chicken again, stir a bit, then spoon the cornbread mixture onto the mixture.

Bake till cornbread is done and the chicken is bubbly.

Sounds complicated--but it isn't--very flexible, too. The tenders cook faster than frozen chicken breasts and usuall can be cut with the side of a fork--VERY child friendly.

Roasted vegetables - cauliflower, green beans, asparagus - just coat the veggies with a little olive oil and sea salt on a cookie sheet (or glass cake pan) at 425 degrees until brown and good.

wow amy how exciting!!!! ok so here's one for ya - i am cuban and this is a fave quickie called picadillo
brown ground meat with a little onions and bell pepper. add chili powder and cumin to taste (we use alot). pour in half a small can of tomoato sauce and two spoonfulls of chopped black olives. serve over rice with a fried egg on top.

EASY PEACH COBBLER
1 can sliced drained Peaches
1 cup Flour
1 cup Sugar
1 cup Milk
1 stick butter
cinnamon
Sift Flour & sugar together in a bowl and slowly add the milk until blended smooth.
Layer baking dish with 1/2 stick of butter sliced
Spread peaches evenly and sprinkle with cinnamon
Pour flour,sugar & Milk mixture over peaches
Slice the rest of the button on top
and sprinkle cinnamon & sugar
Bake at 350 until done (45 min)

This is soooo good and easy!

Ingredients

* 1 red bell pepper, seeded and thickly sliced
* 1 green bell pepper, seeded and thickly sliced
* 1 yellow bell pepper, seeded and thickly sliced
* 2 large onions, thinly sliced
* 5 tablespoons extra-virgin olive oil (EVOO), divided
* Salt and freshly ground black pepper
* 4 boneless pork loin chops, about 1 1/2 inches thick (ask your butcher for these)
* 1 teaspoon fennel seeds
* 1 clove garlic, grated
* 1/2 to 1 teaspoon crushed red pepper flakes, optional
* 1/4 cup Parmigiano Reggiano cheese, shaved


Yields: 4 servings
Preparation

Preheat an oven to 400ºF.

Place the peppers on a baking sheet, drizzle with 2 tablespoons EVOO and season with salt and freshly ground pepper. Place in the oven and roast until tender, about 20 minutes.
Step

In a large skillet over medium-high heat, preheat 2 tablespoons EVOO, about two turns of the pan. Season the pork chops with salt and freshly ground black pepper, transfer to the hot pan and sear until brown on both sides, 3-4 minutes per side.

Transfer the chops to a sheet pan and allow them to finish cooking in the oven about 10 minutes (if using thinner chops, reduce your cooking time). Once the chops are cooked through, cover them with foil to keep them warm until ready to serve.

In the same pan the chops were cooked in, heat the remaining tablespoon EVOO, about one turn of the pan, over medium heat. Add the sliced onion, fennel seed, garlic and red pepper flakes, and sauté until tender. Tent the onions with a piece of foil as they sauté so they slightly caramelize.

To serve, place one pork chop on each plate and top with caramelized onions and a sprinkling of shaved Parmigiano Reggiano cheese. Serve the roasted peppers alongside.

My favorite quick recipe is poor man's lasagna.
1 bag of egg noodles
1lb ground meat
1 jar spaghetti sauce
1 container of rigotta cheese
1 lb mozzeralla cheese

cook ground mt and cook noodles

In a cassorole diss add meat, sauce, and noodles. mix.

Prepare rigotta chesse as desired. put rigotta cheese in pockets around the cassarole dish.

sprinkle with mozzerella cheese. Back till cheese is melted.

My favorite fast recipe is taco soup!

Brown 1 lb ground beef
Add 1 can corn drained
1 can dark kidney beans drained and rinsed
1 can light kidney beans drained and rinsed
1 14.5 oz can diced tomatoes
2 8 oz cans tomato sauce
1 packet taco seasoning

Heat thru! Serve with tortilla chips, shredded cheese, and sour cream.

Yay for you! It's no question why you've passed so many hits so quickly...you are a very talented woman! =) My favorite thing in my kitchen is my crockpot. I throw a package of boneless, skinless chicken thighs in with a can of chicken broth, a can of diced tomatoes and green chiles, and if you like spicy, a can of diced jalapenos. Spice it up with some garlic, onion, pepper and chili powder and put it on low all day. The chicken is so tender that it shreds basically when you go to fork it out of the pot. Perfect for whatever filling you want: chicken tacos, burritos, enchilada casserole or stuffed chiles. And so, so yummy! Thanks for the opportunity at some fun stuff! I really want to check out one of those papercrafting mags, but have been too lazy to go to B&N to pick one up! Crossing my fingers...

1 package frozen hash browns( the itty bitty ones) 1 can mushroon soup, 4 cups shredded cheese and i small onion chopped. Combine all in a crock pot and stir every once in a while- cool till warm through-- yum yum.

Here's my favorite quick meal. In fact, we just had it last night! Greek Tilapia:
Layer steamed spinach in the bottom of a glass pan or casserole dish. Layer with fresh sliced mushrooms. Place thawed tilapia filets on top. Seas as you like. Sprinkle with thinly sliced red onions. Sprinkle generously with feta cheese. Spray with Pam or dot with butter. Bake at 350 until the fish is flaking and feta is lightly browned. There are no measurements--you just adjust based on how many you are cooking for and how much of each thing you like! YUM!

Here is a recipe for Brocolli/Cauliflower Salad.
2 heads brocolli (cut up)
1 head cauliflower (cut up)
1 lb. bacon fried crisp
1 cup mayo
1/2 cup sugar
2 Tbsp. vinegar
Mix mayo, sugar & vinegar for dressing (I add a dash of garlic powder). Pour over brocolli & cauliflower. Add crumbled bacon and chill for several hours. Yummy.

Hello Amy! I am going to post the recipe for Texas Caviar because every time I go somewhere that requires me to bring a snack, this is what I take and everyone just LOVES it:

Texas Caviar

½ cup cider vinegar
½ cup sugar
½ cup olive oil
Bring to a boil and let it cool slightly

1 cup chopped red onion
1 cup chopped celery
1 can rinsed black eyed peas
1 can rinsed black beans
1 jar pimentos
1 jar jalapeno peppers chopped
1 small can black olives chopped
1 can shoepeg corn rinsed

Combine all ingredients, add marinade, mix well and refrigerate overnight.

Lasts a long time if refrigerated.

One of our favorite easy recipes is To Die For Roast. It really is to die for! :) You put a roast in the crockpot and add a package of dry brown gravy mix, a package of dry ranch dressing mix, a package of dry italian dressing mix and 1/2 cup water. Cook on low 7-9 hours. It is SO good!

Favorite super fast recipe. Measure out rice, add a can of stewed tomatoes, black beans, corn, cumin, oregano, and a little bit of water. Then once the rice has cooked you put in in tortillas and top with cheese. (I also like to make oven chimi's with them, but that takes a little bit longer.) Congratulations on your cards too!!

Chocolate Mousse Cupcakes
• 6 eggs
• 1/4 cup plus 2 tablespoons All-Purpose flour
• 2-1/3 cups (14 ounces) milk chocolate, coarsely chopped, melted and cooled slightly
Directions
Preheat the oven to 325 degrees F. Insert liners into mini or medium cupcake pans.
In a large bowl beat together the eggs and flour with an electric mixer on medium speed. Add the melted chocolate. Beat until combined.
Fill the cupcake liners three-quarters full. Bake mini cupcakes for 7-10 minutes and medium cupcakes for 12-15 minutes, or till the cakes are set but the centers still shake. Cool in the pan for 20 minutes. The centers will set into a mousse.

Sparkling Fruit Punch- raspberry or similar flavor sherbet; 2 liter sprite, 7-up or lemon lime soda; 1 gallon fruit punch. Mix and serve. A recipe? Does open box, pour cereal in bowl, add milk & enjoy count? How about Mexican pizza - brown ground meat and add taco seasoning. When that's cooked add a can of refried beans. Spread this mixture on your pizza dough, top with shredded taco cheese and top with dice onion. Cook on a pizza stone heated to 500 degrees for about 10 minutes. This is very filling! Anyway - these stamps are adorable!!! LOVE the dinos!!! Thanks!

Super quick! We are vegetarians in my house. So one of the things that we like to eat are fake chicken nuggets (Morningstar brand). You can bake in the oven for 18 minutes or throw in the microwave and then slice those thin and put on top of a salad. With a side of garlic bread or a cup of soup makes a complete meal. You could always substitute real nuggets if you prefer meat.

Here's mine:

Italian Bean and Sausage Soup

12oz. jimmy deans sage sausage
2tsp. olive oil
1c. frozen chopped onions
2tsp. minced garlic (i use from a jar)
1 (28oz.) can of diced tomatoes
3c. of water
2c. med size pasta shells
2 chicken bouillon cubes or 2 tsp. instant granules
1 (19 oz.) can of Great Northern beans

Heat oil in a heavy 4-quart pot. Add sausage, onion, and garlic.
Cook over high heat, stirring often, until sausage browns. Add
tomatoes and their juices, the water, pasta, and bouillon to the pot.
Bring to a boil over high heat, stirring once or twice. Reduce heat,
cover and simmer 7 minutes. Meanwhile, rinse and drain beans. Add to
the soup and simmer 4 minutes or until pasta is tender and beans are
heated through. Serves 6

Start to finish is about 30 min.

Oh, what great blog candy! The recipe I have for you is one I just came across myself, my six yr. old loved it! In my opinion that means everyone would :).

Ingredients:
1 boneless beef chuck roast (about 3 lbs.)
2 cans (10 3/4 oz. each) condensed cream of mushroom soup, undiluted
1/3 cup beef broth or sherry, or wine
1 envelope onion soup mix

Cut roast in half, place in a slow cooker. In a bowl. combine the remaining ingredient; pour over roast. Cover and cook on low for 8-9 hrs. or until meat is tender.

Super easy and really yummy with mashed potatoes or rice.

My Easy Recipe is one that is a standby for BBQ nights, or if we need to bring a jello salad somewhere...it's very easy to make it low-cal, too!

Orange STUFF (seriously, that's what we call it!)

1 (16oz) cottage cheese
1 pkg. Jello (I use large Sug.Free)
1 (8oz) tub Cool Whip

Mix cottage cheese & Jello in bowl. Fold in Cool Whip. Put in fridge for at least 30 min. before serving.

DONE! You can also fold in a small can of mandarin oranges (drained) after the Cool Whip.

*We also enjoy Strawberry-Banana, Strawberry, or Raspberry favors (SFree), A non SF one that is good is Grape. YUM!

Lemonade Pie:

Mix 1 Can Pink Lemonade with 1 large Cool Whip and I Can Sweetened Condensed Milk. Freeze in a graham cracker crust, serve with fresh raspberries or strawberries. . .

You can also squeeze a couple of drops of red food coloring to make it more "pink!" Enjoy!

Fave super fast recipe? I'm guessing with no microwave involved? hehe! That would have to be BBQ chicken. Take about 4-6 (or more) boneless, skinless chicken breasts, cut them into chunks (don't have to be small), pour an entire bottle of your fave BBQ sauce on top, cook at 350 for an hour! So tender and yummy! Hope you try it and like it! And congrats on getting published!

Really easy salad to munch on for a snack or if you have to take something to church. Raw veggies broccoli, carrots, cauliflower or whatever you choose. Dump in bowl and cover with Green Goddess Salad Dressing. Best if can let marinate overnite but very delicious either way.

Well, the quickest meal I make is to get a rotisserie chicken from Sam's Club, throw some baked potatoes and Steamfresh veggies in the microwave, and you're all set!

Here's a really great recipe I make from Simple & Delicious (my MIL subscribes me):
Tangy Breaded Pork Chops (works with chicken too)
1 egg
1-1/2 tsp prepared mustard
1 tsp minced garlic
1 c. dry bread crumbs
4 boneless pork loin chops
2 tbsp vegetable oil

In shallow bowl, beat egg, mustard, and garlic. Place bread crumbs in another shallow bowl. Dip pork chops in egg mixture, then coat with crumbs.
In large skillet, brown chops on both sides in oil. Cook uncovered over medium heat for 5-7 min. or until juices run clear.

Prepare 1 pkg of Good Seasons Garlic & Herb salad dressing and marinate chicken breasts for at least 1 hour. Grill and serve with noodles and roasted veggies!

This is the nicest quick dessert!
FRUIT COCKTAIL CAKE
In one bowl mix
2 cp flour
2 cp sugar
1 tsp baking soda
1 tsp salt
ADD
2 eggs, beaten
19 0z can fruit cocktail including juice.
Stir together. Bake in greased 9 x 13 in. pan for 1 hour at 350F
SAUCE
1/4 cp butter (real butta)
1/2 cp sugar
1/2 cp heavy cream. I use whipping cream and then what is left I whip just to add more taste.........NO extra calories. LOL
Heat almost to boiling. Serve over warm cake.
Hmmmmmmmmm....maybe I should make it for supper.

Great prize. Thanks for the opportunity. Here's my recipe -- takes awhile to cook but super easy to prepare.

Preheat oven to 425F. On a rimmed baking sheet toss about a lb. of carrots with oil and season with salt and pepper. Push to the sides of the pan. In the centre place a boneless turkey breast half. Coat top of turkey breast with a whole grain mustard. Pop it into the oven until it's cooked (about 1 hour and a half). Voila. Delicious.

Brown 1# ground turkey, with 1/2 - 1 onion; add taco seasoning and dry package of ranch dressing; add one can of pinto beans, one can of chili beans, two cans of ro-tel tomatoes (I use mild), and 1# bag of frozen corn. Heat through and enjoy. It is awesome.

Congratulations! Would love to check those out. Here's a quick recipe I started making for my hubby who needs to eat more veggies - it's pretty good!
Spinach sub:
Heat olive oil in pan and add garlic to taste. Throw in a can of mushrooms. Heat for a few minutes, then throw in a bag of frozen chopped spinach. Cook thoroghly and place some in a roll with a slice or two of provolone cheese. Enjoy!
Oh - I've got a pink obsessed 4 yo daughter too - feel your pain! : )
